HPS Structuring Fat
HPS Structuring Fat is a beaded non-hydrogenated refined fat from palm fruit, of non-lauric origin. It may be used as a dough conditioner to minimize post hardening of dough, stabilizing fat in nut butters, and as a crystallizing aid in compound fat coatings.
